Strawberry Jelly (THM-FUEL-PULL! gluten free, sugar free)

This is sooooo simple to make and is delicious! The chia seeds look similar to the seeds in the strawberries, so no one can tell it’s chia seeds. The same miracle seed also thickens it, so no need for other thickeners!!! I keep it in the fridge for two weeks or more, if it lasts that long. Chia seeds are an S Fuel in the THM language, but 2 tablespoons keep it in the fuel pull range.

The strawberry jelly/topping can be used as a topping for pancakes, waffles, cheesecake, yogurt, ice cream, scones or it can be used as a jelly. If you’re in need of a quick pick me up, just take a spoonful. It is so good and so good for you! It has fiber, protein, fat, calcium, magnesium, Manganese, phosphorus, potassium, vitamin B 1,2 and 3.

Ingredients:

4 cups strawberries (fresh or frozen) or raspberries

2 tablespoons gentle sweet * or your favorite sweetener, or honey if you’re not in weight loss mode

2 tablespoons Chia seed

1/4 teaspoon mineral salt *

Simmer the ingredients for 10-15 minutes, stirring occasionally. Mash it with a potato masher or fork. It will gel more when refrigerated. If you want it thicker, you can add another tablespoon of chia seeds. Enjoy!!
