Cold Spaghetti, THM, S

Our summer favorite…..make it when you have plenty of tomatoes! Great place to hide zucchini!!!!!! Can’t see zucchini in the salad, but it’s there, and no one knows! Even picky kids can’t tell!

Ingredients:

1 onion chopped finely

1/4 cup ac vinegar

1/2 cup olive oil

5-10 tomatoes, chopped finely

Medium zucchini, peeled and shredded finely

Seasonings to taste: mineral salt, pepper, basil

1 pkg Dreamfield spaghetti, cooked and cooled

Topping: Parmesan cheese

Instructions:

Let the chopped onions sit in the ac vinegar an hour or so to soften up. While spaghetti is cooking, add everything else to a big bowl. After cooking the spaghetti, rinse in cold water and add to the olive oil mixture right away, so it doesn’t get clumpy. Mix and let sit several hours or overnight and serve with Parmesan cheese. It’s amazingly good!!!

Note: The zucchini is optional, but, why not?
