Disappearing Sourdough Raisin Buns, THM, XO

Growing up, we had these on occasion….so good! I adapted them to THM and used sourdough too! They disappeared pretty fast! No one grumbled about sourdough….

Ingredients:

1 1/2 cup water

2 cups bubbly sourdough starter

2 tbsp soft butter

2 tbsp honey

1/4 cup THM Gentle Sweet (or your favorite sweetener)

5 cups whole wheat flour (added as you mix, could be more or less)

1/2 cup raisins or unsweetened dried cranberries

1 1/2 tsp mineral salt

Instructions:

Mix all the ingredients in a Bosch or other bread mixer, except the salt and the flour. You could definitely knead it by hand too!! Add the flour slowly till the bowl gets cleaned up somewhat by the mixer. Let the dough rest for 20 minutes. I add the salt to the side so I don’t forget it! Knead it for 9 minutes. The dough should be stretchable now. Put it into a greased covered bowl. Let it sit for five hours. Shape into golf sized balls and lay on a parchment paper lined cookie sheet. Let rise 2 hours. Preheat the oven to 400° and bake about 20 minutes or till browned nicely.

You can use this recipe for regular dinner rolls….just skip the raisins and the Gentle Sweet….so good! Bake at 400 to get a crusty roll that’s soft inside!!!!
