Taco Soup (THM-crossover, gluten free, sugar free)

About 17 years ago we did a five hour road trip to VA with our little ones. Some friends there welcomed us with a big pot of this soup….it was soooooo good…. this makes a huge pot of soup!  Great to freeze in small containers for quick meals!! You could always make smaller amounts if you prefer.  Or if you have a crowd coming on a cold evening….

Get your biggest pot out. I have a big one to cook and can my tomato sauce in the summer. It holds about 4 gallons. And that’s how I get my quarts of tomato juice and stewed tomatoes. You could definitely replace that with your favorite tomato products.

Put 4-5 cups of dry PINTO beans in a crockpot and simmer till they’re soft. Pintos are my favorite.  I dump the water and give them fresh water after they’ve cooked a while. I think it helps eliminate gas from eating beans. That will take about a day till they’re soft or overnight, depending on your crockpot.

Ingredients:

3 pounds hamburger (or sausage or ground turkey or chicken)

3 onions chopped

4-8 garlic cloves minced

2-4 qts Cooked pinto beans

1 qt broth

2 qt tomato juice

2 qt stewed tomatoes

2 qts corn

1 tbsp mineral salt *

1/2 tbsp pepper

1 tbsp cumin

For serving:

Corn chips

Cheese (shredded or chopped in little cubes)

Fry your ground meat, onions and garlic, then add all the other ingredients and bring to a simmer. Serve with cheese, corn chips and sour cream.
