Chili Soup (THM-S or E, gluten free, sugar free)

This is a great chili with cheese, sour cream and corn chips added. We use this for haystacks also….corn chips, rice, chili, lettuce, tomatoes, peppers, cucumbers, cheese, sour cream, salsa….makes a nice stack!! Prepare the day ahead by putting 4-5 cups dry pinto beans in a crockpot to soak for a few hours or overnight. Drain the water and put fresh water in and cook overnight or till soft.

Ingredients:

1 onion chopped

4 garlic cloves minced

2 lbs hamburger

2 tsp mineral salt *

1 tsp pepper

1 tbsp chili

1 tbsp mustard

1 tbsp molasses

1 qt tomato juice

2 cups broth

2-4 qts pinto beans cooked

Instructions:

Fry the onion, garlic, burger, then add all the other ingredients and bring to a simmer. You can eat it immediately or put it back in the crockpot where the beans were cooking and have it on low for a few hours. Serve by itself or with haystacks or with corn chips and shredded cheese and sour cream. Let me know if you try it! (For those following THM, make sure the hamburger is lean, If you want an E meal, and top it with Greek yogurt instead of sour cream.)
