Impossible Pie THM-S (Sugar free) VERY SIMPLE!!

This brings back memories of my school days in Costa Rica. My friend and I would go to a coconut tree, drop a coconut, chop it, take out the coconut pulp, shred it, then we’d put this mix in the blender and bake it. After all that effort, it was a major treat! It truly is very simple if you use bought, shredded coconut. Throw it all in the blender and bake it. It uses very little baking blend. The name implies that it’s impossible to flop it. It separates into layers, so no need for a crust! The simplest pie ever IF you have coconut on hand! 🙂

Ingredients:

3 eggs

1/2 cup almond milk

1/3 cup baking blend

3 tbsp butter

3/4 cup shredded unsweetened coconut

1/2 cup gentle sweet (or less)

1/2 tsp mineral salt

1/3 tsp baking powder

1 tsp vanilla

Instructions:

Put everything in a blender and blend 30-60 seconds. (Or you could use a stick blender). Put it into an ungreased pie pan. Bake at 350° for 40 to 50 minutes. I had some with coffee this morning for my morning snack. Sooo good!

Not a clear recipe. No idea what baking blend is. I looked it up and it seemed to be a sweetener, but there is already something called gentle sweet in the recipe, so I chose not to make it. Maybe be clearer about what these things are.
