Banana Muffins THM-E, sugar free, gluten free

This is my 11 year old’s go-to muffin….she’ll eat quite a few! The original recipe didn’t call for any sweetener, so it’s optional, but I like to add a little.

Ingredients:

4 large ripe bananas (or 5 small)

2 egg whites

1/3 cup Greek yogurt

1 1/2 cup baking blend (or a mix of almond and coconut flour) Or SPROUTED FLOUR!!!!

1 tsp baking soda

1 tsp baking powder

1/4 cup Gentle sweet or your favorite sweetener

1/2 tsp mineral salt

1/4 cup chocolate chips (sugar free) or 85% chocolate bar chopped

1 apple cored and shredded (optional) (Makes the muffins moist.)

Instructions:

Mix bananas, eggs, yogurt well. Dump dry ingredients on top-mix a bit, then mix into wet ingredients. Add chocolate chips and optional apple. Put into two muffin pans. Yields 24. Bake at 375 for 20 minutes. (If you don’t need to keep it in E mode for the Trim Healthy Mamas, you could definitely add the yolks in also).

Edited: I made them with sprouted flour, and they were soooo good!! I skipped the apple and they were great. Just depends if you want some fruit in them.

If you used sugar free applesauce instead of the apple, how much should you use?
