Meatball Soup, THM, XO

Deliciously satisfying, hearty man soup! One of my guys had four servings!

Meatball Ingredients:

4 eggs

2 tsp mineral salt

1 tsp pepper

1 cup baking blend or oatmeal

1/2 cup whipping cream or broth or water

2 lbs ground hamburger (or ground turkey)

Soup ingredients:

1-2 chopped onions

1 cup diced celery

2-4 cloves garlic finely minced

4 cups broth

4 cups stewed tomatoes

Seasonings: salt, pepper, Italian seasoning….

Browned meatballs

1 cup Dreamfield rotini pasta or your favorite healthy pasta

3 tbsp cream (optional)

Instructions:

Mix meatball ingredients, except the meat well. Crumble ground beef into the mixture to form into small balls. Fry or broil till browned. That helps them to keep their shape and tastes amazing!

In a big pot, sauté the onions, garlic, and celery and add the broth, tomatoes and seasonings. Bring to a simmer, then add meatballs. Add the pasta 15 minutes before serving, while simmering gently. The cream can be added just before serving.

Notes:

Feel free to add other veggies like zucchini, squash, broccoli, spinach, mushrooms…. my children liked it without extra veggies, but they would be great in it!

If you skip the oatmeal and stick to dreamfield pasta, this could easily be an S for those separating carbs!
