Fresh Raspberry Pie, THM, XO, Sugar and Gluten-free

This is one of our favorite pies…. The kids know if they pick a quart of berries, I’ll make them a pie. They picked four quarts!! so four pies were made within a few days! we pick the raspberries in our woods…any type of berry could be used. It’s super good!!

Glaze ingredients:

1 1/2 cups cool water

1 rounded tbsp THM beef gelatin

1/2 cup THM Gentle Sweet or your favorite sweetener

2 tbsp Xylitol sweetened red jello (optional)

Pinch of mineral salt

1 qt fresh berries

Baked pie crust

Instructions:

Have a cooled pre-baked pie crust made. Mix all the glaze ingredients in a pot, then bring to an almost boil. Let cool a little and add a quart of fresh raspberries or strawberries and pour into the crust before it sets. Refrigerate and enjoy a few hours later, garnished with whipped cream and fresh berries.

Note: The red jello is for color. You can smash a few berries to give the glaze a red color if you don’t have the red jello.

I as it says quart of raspberries in the instructions.

    I have the raspberries listed below since they’re added after the glaze cools a little.
