Chocolate Pudding (THM-S, gluten free, sugar free)

Chocolate pudding is a favorite for all of us. I’ve made multiple tries to make it tasty, yet nutritious! Here’s a way to get your eggs in, so serve it for breakfast if you wish! If you want it for a filling for a chocolate pudding pie, just add an additional tbsp unflavored gelatin. The mixture of the gelatin, xanthum gum and eggs, give it just the right amount of thickness for a pudding texture.

Ingredients:

1/2 cup cocoa

7 cups cashew milk (or milk of choice….since I cook for my teenagers, I use raw milk)

1 tsp xanthum gum

2 tsp unflavored gelatin

4-6 eggs

1 tbsp collagen * (optional)

1 tbsp protein powder * (optional)

1 tbsp butter

1 tsp vanilla

1/2 tsp salt

1/2 cup gentle sweet * or sweetener of choice

Instructions:

Put the milk in a heavy pot, and sprinkle the gelatin on top of it so it can bloom. Add the cocoa and bring to a simmer. While it is heating , you can add the xanthum gum and whisk it till it’s mixed. Keep whisking the milk often while it’s heating, so it doesn’t scorch.

Crack the eggs into a separate bowl, and add a cup or two of the warming milk, (not hot!). Beat or blend well with an immersion blender, if possible , (so you don’t have hard boiled eggs), then add to the milk that’s heating, while continuing to blend. Bring it to a simmer then turn off the heat and add the butter, vanilla, salt, and sweetener, and the optional protein powder and collagen. I like to blend everything with the immersion blender so it’s silky smooth. It will get thicker when cooled. Delicious served with whipped cream or reddi whip. If you want it thicker for pie or Mississippi Mud, add more gelatin. Enjoy!

Tip: when the pudding is done, but still hot, add in a dark chocolate bar….it will melt right in. Got that one from my youngest sister in British Columbia! Thanks! I do it every time!

Tip 2: That one teaspoon of xanthum gum thickens the pudding, so make sure it gets blended in well, not stuck to the side of a utensil!!

Tip 3: Four eggs is great for the pudding. I add extra sometimes to get more protein in.. Some of my kiddos don’t like eggs for breakfast, this way they are eating eggs and not complaining!
