THM Sourdough Pancakes, E

Try these  waffles or pancakes!  They’re so good!  I’ve been making waffles, and they are tops!!!  They’re a combination of the THM pancakes with a sourdough twist. Before you stop reading, cuz of seeing ‘sourdough’, hang in!!! It doesn’t mean they’re sour! Read on to read my sourdough secret!

How to make sourdough baked goods not sour? Feed it often!   First thing in the morning, feed it…flour and water. An hour later, that stuff is sitting on the counter, bubbly and happy. You can then use it for these pancakes or waffles or make a batch of bread or cinnamon rolls or doughnuts or rolls or biscuits or whatever strikes your fancy! (I’ve been making something on a daily basis!). You can definitely feed the sourdough in the evening and even during the day, if you want more. I have a Bosch mixer that I use constantly. Other mixers work too, or you can knead it by hand. It’s a good workout!

Ingredients:

1 cup oats

1 cup egg whites

1 cup lowfat cottage cheese

2 tsp vanilla

4 doonks of stevia (or your favorite sweetener)

2 tsp baking powder

1/2 tsp mineral salt

2 tbs THM baking blend or almond flour or coconut flour

2 cups bubbly sourdough starter, well fed

Instructions:  Blend the oats in a blender to make oat flour.  Add the egg whites and cottage cheese and blend.  Scrape down the sides and add vanilla, baking powder, sweetener, salt and baking blend.  Put in a bowl and add the sourdough starter and mix.  Fry in waffle maker or non stick skillet, with a bit of oil.  

Note:  If you’ve never messed with sourdough before, this recipe alone is worth getting the starter.  You can send a self addressed stamped envelope to Oregon Trail Sourdough, and they’ll send you a free starter.  Then, of course, you might as well make some delicious bread too!  I have a few sourdough recipes on my website and Around the Family Table has a whole bunch more!  I have a sourdough mini crash course on some of my sourdough recipes.

Note #2:      Any cottage cheese can be used if it doesn’t need to stay in E mode.
