Basic Homemade Ice Cream, THM, S

My family says it’s the ‘best homemade ice cream I ever had’ and ‘it compares to McDonald’s ice cream‘…. when I made the chocolate version. We have our own Jersey milk and lots of cream, so that’s what I used. But you can use almond milk instead, if you’re on a weight loss journey.

It’s super easy to mix…. Just blend, then freeze in a countertop ice cream maker. If you have leftovers, freeze and use for a smoothie next time! It serves about 8 people. You’ll need a 3-5 quart size ice cream maker for this amount. If you don’t have an ice cream maker, it can be frozen in a shallow cake pan and blended before it’s frozen hard.

Ingredients:

2 cups almond milk (or your milk of choice)

3 cups cream

1/2 cup cottage cheese

1/2 cup Gentle Sweet (or your favorite sweetener)

1 tbsp vegetable glycerin

1 tsp beef gelatin dissolved in a tbsp hot water

1/2 tsp mineral salt

1 tbsp vanilla

Optional flavors for this basic ice cream:

1/3 cup cocoa for chocolate ice cream,

pecans toasted in a little butter for butter pecan! (Yum, yum!)

Fresh chopped strawberries or raspberries to top the basic ice cream

Chocolate syrup to top the basic vanilla ice cream

Bananas, whipped cream, chocolate syrup and crushed peanuts for banana splits!!

Any other flavors you want to add, like caramel extract or coffee extract, or crushed cookies…. Enjoy!! and post a picture of your creations!! 🙂
